Vegan Eggnog French Toast

Put a festive spin on classic French toast by using eggnog in place of milk!

Ingredients

  • 1 cup vegan eggnog
  • 1 tablespoon ground flaxseed or chia seeds
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 3 tablespoons flour*
  • pinch of salt
  • 4-5 thick slices of bread preferably stale*
  • coconut oil or vegan butter for frying

Toppings

  • maple syrup or powdered sugar
  • whipped coconut cream
  • fresh fruit or fruit preserves

Instructions

  • Whisk together eggnog, flaxseed, spices, vanilla, flour and salt. Allow to sit in the fridge for 10-15 minutes so the flaxseed absorbs the liquid. Remove from fridge and whisk thoroughly.
  • Heat a tablespoon of vegan butter or coconut oil over medium heat until melted.
  • Dip stale bread into batter for just a few seconds, then fry for 3-5 minutes per side until crispy and golden brown. Stir the batter each time to keep all the spices from floating to the top and sticking to just one piece of bread.
  • Serve immediately with desired toppings.

Notes

*This recipe can be made gluten-free by substituting in your favorite gluten-free bread and flour. Chickpea or brown rice flour work perfectly here.
You can make a big batch of this French toast and freeze or refrigerate for easy, on-the-go breakfasts. Simply reheat in the microwave or even use your toaster.
