Preheat oven to 350°F. I highly recommend baking in a silicone muffin tin or liners for the easiest removal. Otherwise, generously grease a standard muffin tin.
Divide the Just Egg evenly between the 12 muffin cups.
In a separate mixing bowl, combine your add-in ingredients. Season with salt and pepper. (If you're using vegan meat or cheese substitutes, these tend to be quite salty, so cut back on the extra salt as needed.)
Divide ingredients evenly between the 12 muffin cups. I add roughly 2 tablespoons to each one. If needed, give each muffin cup a quick stir to disperse the ingredients in the Just Egg. (I like to use a chopstick or a toothpick for this.)
Bake in preheated oven for 20-22 minutes. The egg bites will be puffy and slightly golden brown around the edges. Remove from the oven and allow to cool slightly and firm up for about 10 minutes before enjoying.
