To the bowl of a food processor (or a blender with tamper), add all ingredients. Process until smooth and whipped, occasionally scraping down the sides to make sure everything is evenly blended.
Taste and adjust salt to preference. Vegan feta is quite salty, so you may not need to add much at all depending on the brand you’re using.
The dip may have warmed up a bit during preparation. It can be served right away but I recommend letting it chill for about 30 minutes before serving.
Vegan whipped feta can be enjoyed as a dip or spread, but I also love to use it as a cool and tangy base for roasted or braised vegetables. (See notes for my personal favorites.) To do so, spread the whipped feta on a serving platter and pile roasted vegetables on top. Garnish with fresh herbs (such as chopped parsley), chopped nuts, pepper flakes, and an extra drizzle of good extra-virgin olive oil and enjoy.
