Coconut Chia Pudding
- 1 13.5 oz can full-fat coconut milk
- 1/2 cup chia seeds
- 1-2 tablespoons maple syrup or sweetener of choice
- 1/2 tsp vanilla extract
- 1/4 – 1/2 cup plant milk of choice optional, to thin out pudding
- Whisk together all ingredients thoroughly. Cover and refrigerate for at least 4 hours or overnight until pudding has thickened.
- Stir in additional 1/4 to 1/2 cup plant milk to thin out pudding to your desired consistency. Enjoy with fresh fruit!
