This creamy pudding is delicious, high in protein and fiber, and requires just a few ingredients!

Ingredients

  • 1 13.5 oz can full-fat coconut milk
  • 1/2 cup chia seeds
  • 1-2 tablespoons maple syrup or sweetener of choice
  • 1/2 tsp vanilla extract
  • 1/4 – 1/2 cup plant milk of choice optional, to thin out pudding

Instructions

  • Whisk together all ingredients thoroughly. Cover and refrigerate for at least 4 hours or overnight until pudding has thickened.
  • Stir in additional 1/4 to 1/2 cup plant milk to thin out pudding to your desired consistency. Enjoy with fresh fruit!

    This recipe is awesome! If you have ever had basil seeds in a drink, the texture the chia seeds take on is very similar. This is a super easy recipe (that I have made several times now). I love to pair it with berries and it is delicious!
